It seems that the yellowish video is a problem with DOSBox for Mac OS X. I tried it the same way in Windows and the video is fine. I also did the local CD copy trick (1.6GB of space needed), and that works fine. The sound doesn't garble after a while either, but is occasionally choppy.

Note that with the DOS version, the subtitle patch is not available, nor are non-interlaced videos (or at least, I couldn't get them working). If you can play the Win95 version, I would do that, although the DOS version fixes the speed issues that the Windows version has on fast (read: post-2000) machines.

The DOS version of this game will work, but not perfectly. First, select General MIDI for music and SB16 for sound, and this will work fine. (It will also detect some other MIDI devices, but General is the one with the best quality.)

Then, make sure you mount the CD with "-label ZORKNEM_I", or else it won't recognize the CD. I'm not sure what effect this would have on CD swapping (I haven't gotten that far). You might be able to use the copy-all-CDs trick that people use with the Win95 version.

It recognized the VESA 2.0 mode with 640x480x15bpp, however, all the colors were wrong (svga_s3 video setting). Everything had a strong yellow-green tint. If I went full-screen many of the colors were fixed, but some garbage magenta pixels would appear. If I find another setting that fixes this I'll post it.

Also, after playing a while, the sound would start to sound garbled. Restarting the game would fix it for another while.
